Ingredients:

1 cup all-purpose flour,

1/2 cup unsalted butter, softened

1/4 cup granulated sugar

1/4 cup brown sugar

1 egg

1 tbsp instant coffee granules

1 tbsp hot water

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

Instructions:

Preheat Oven: Set the oven’s temperature to 350°F or 175°C. Use parchment paper to line a baking sheet.

Prepare Coffee Mixture: Dissolve the instant coffee granules in hot water and set aside to cool.

Cream Butter and Sugars: Using a big bowl, beat softened butter, brown sugar and granulated sugar until frothy and light.

Add Egg and Coffee: Beat in the egg, dissolved coffee and vanilla extract until well combined.

Combine Dry Ingredients: Whisk flour, baking powder and salt in a separate basin.

Mix Together: Stirring until just incorporated, gradually add the dry ingredients to the wet mixture.

Shape Biscuits: Using a tablespoon-sized amount of dough, place them about two inches apart on the baking sheet that has been prepared.

Bake: Bake for 10 to 12 minutes, or until the edges are golden brown, in a preheated oven.

Cool: Let the biscuits cool for a few minutes on the baking sheet, then move them to a wire rack to finish cooling.

Serve: Savour your coffee biscuits while sipping coffee or tea!
