1 cup brewed coffee, cooled to room temperature
1/2 cup plain Greek yogurt
1/4 cup coconut oil (or another healthy oil of your choice)
1 tsp vanilla extract
1/2 cup dark chocolate chips (70% cocoa or higher)

Preheat the oven to 350°F (175°C) and line or mildly lubricate a muffin tin with paper liners. Combine the dry ingredients in a large mixing bowl- whole wheat flour, rolled oats, ground flax seed, cocoa powder, baking powder, baking soda, salt and sugar. In a separate basin, thoroughly combine the liquid ingredients- brewed coffee, Greek yogurt, coconut oil, egg and vanilla extract.
Pour the liquid ingredients slowly into the dry ingredients and stir until just combined. Take caution not to overmix; a few chunks are acceptable. Fold optional ingredients such as dark chocolate morsels, nuts or dried fruits into the muffin mixture. Each muffin cup should be approximately two-thirds filled with the mixture.
Bake for 18 to 20 minutes in an oven that has been preheated or until a toothpick inserted into the center of a muffin comes out clean. Wait a few minutes before transferring the muffins to a wire tray to cool completely.
